1. TRICOLOR GRAPE PIZZA WITH GOAT CHEESE AND THYME:
1 kilo of prepared pizza dough
2 1/2 tablespoons of extra virgin olive oil
2 cups of green, red and black California grapes, cut in half
Two tablespoons fresh thyme leaves or two teaspoons dried
1/4 cup coarsely chopped walnuts
2 oz of fresh, crumbled goat cheese
Two tablespoons of freshly grated Parmesan cheese

Place a wire rack in the oven and place an inverted baking sheet on top of the wire rack; heat the oven to 500 F.
On a floured surface, press the pizza dough into a 10-inch circle and cover with a towel while making the toppings.

Keep the mixture to a boil and simmer until the grapes break, constantly stirring and kneading with a potato masher till the mixture thickens slightly, about 15-20 minutes. Mix one tablespoon of water and cornstarch in a small bowl, then add the grape mixture and cook until thickened, about 1 minute longer.
On a floured surface, roll out the pizza dough into an 11 x 15-inch rectangle with thick edges (like a pizza) and place it on the baking sheet. Brush with oil and bake for Appx. 5 minutes or until lightly browned (if the pastry is boiling in the middle, push it with a spatula. it doesn't have to be very smooth). Pour the grape mixture into the rectangle and sprinkle with the cheese; cook for another 5-6 minutes. Sprinkle the surface with parsley, lemon zest and pepper. Two slices of artisanal white bread (or 100% wheat), sliced 1/2 inch thick

One teaspoon of vanilla extract
4 oz. low-fat cream cheese (Neufchatel)
1/4 cup low-fat cream
Two tablespoons of granulated sugar
One tablespoon of fresh lemon juice
About 3 cups of California grapes, halved
In the food processor bowl, combine the flour, sugar and salt; process to melt. Add cold butter and pulse in six 1-second pulses; the mixture should look sandy. In a cup with a fork, combine yolk, water and vanilla; pour over flour mixture and beat five times to incorporate (mixture should still be crumbly). Transfer the mixture to a 9-inch metal pie pan with a removable bottom. With lightly floured hands, Beat well at the bottom of the pan until you get a smooth base. Cool for 15 minutes while heating the oven to 325 F.
Cook the dough for 25-30 minutes, until it is slightly elastic when pressed with a finger, lightly browned and starting to brown on edge. Let cool.
In a medium bowl, combine cream cheese, heavy cream and two tablespoons of sugar. Add the lemon juice. Spread the cream cheese on the base of the cake, leaving a 1/2 inch edge.
